Cheat's Lemon Meringue Pie

Florida is too hot to make your own pastry. I will be using that excuse for the rest of my days here.
Buy yourself a pastry case, blind bake it for 15 minutes according to the packet.
Take a bowl, mix in one 14oz can of condensed milk with 3 extra large egg yolks (save the whites in another bowl for your meringue) and add the zest and juice of 3 large lemons. I like it tangy!
Pour that into your cooled base and then make your meringue by whisking up those 3 extra large egg whites until they are firm enough to tip upside down over your head! Then add 3/4 cup + 3tbsp (175 grams) of granulated sugar one spoonful at a time whilst still whisking. This will make your meringue super glossy and of course...sweet!
Put your meringue on the top of the pie in whatever fashion you like - the recipe I followed suggested piping in dollops but this was a disaster, I would probably just spread with a pallette knife next time but you do you!
That goes in the oven at 300F for 35-40 minutes but keep an eye on it as you want to pull it out just as the top is going a light golden brown and the meringue is firm to the touch...then you know it will still be lovely and chewy inside.
If you caught my Tik Tok video baking this one you'll see I didn't get to taste it because I was making it for a party but let me tell you it was DELICIOUS. So delicious in fact I forgot to get a picture until it was half eaten!
